Hi Susi, so happy to hear you like the recipe! Yes, the fried shallots is really the key and it makes the flavor so much better (and special).
Adding carrots to the dish actually sounds delicious to me, imagine it soaked up all the braising liquid. Next time I might try it out with extra mushrooms šŸ™‚

When I was a student I used to buy Lu Rou Fan from a little Taiwanese food stall – a more low budget version with hunks of carrot instead of the Chinese mushroom but I loved it and have missed it ever since. This version is amazing! I didn’t have pork belly (so used pork neck, nice and fatty, and it worked, though belly would have taken this to another level!) and no cinnamon stick so I substituted the whole species with five spice powder. The fried shallots were a revelation, I never tried making them before. This was so yummy I ate the leftovers for breakfast AND lunch the next day (after which I ran out, and could stop obsessing about going back to the fridge for more šŸ™‚
