Avocado toast gets a Chinese twist in this recipe that’s perfect for a savory start to your day, weekend brunch, or any time you want a simple and fulfilling meal.
If you love avocado toast, this recipe gives it a new spin. The ingredients are simple – avocado, toast, eggs, soy sauce, and chili oil – yet they come together in the most splendid of ways to really satisfy your palate.
Ingredients
Among the key ingredients I use in this recipe are Pete & Gerry’s Pasture-Raised Eggs. An egg isn’t just an egg…the better the quality, the bigger the difference it makes. Especially when eggs are a focal point in your recipe.
Pete & Gerry’s Pasture-Raised Eggs are Certified Humane Pasture-Raised and have no added hormones or antibiotics. The yolks are rich and golden, which is the reason why you’ll want these eggs from chickens that are all living the good life, foraging for snacks and flocking together rather than being cooped up.
Cooking process
Chinese-style avocado toast is such an easy recipe that takes just minutes. You’ll cook the eggs your way – sunny-side up, over easy, or well done.
Next, you’ll assemble the avocado toast by spreading your slices of avocado on top, then placing the egg on top of them.
Your avocado toast will be complete when you drizzle it with some soy sauce and chili oil to give it that Chinese flair. While you can stop right there and enjoy it, it’s even better with sliced green onion and sesame seeds as a garnish.
Different variations
There are a few different ways to change up your avocado toast as well.
If you try out my homemade soy sauce eggs, you can use these soft boiled and marinated eggs on the avocado toast as well. In this case, I would simply give it a drizzle of chili oil since the eggs are already seasoned.
Poached eggs work great on these toast as well.
If your avocado is a bit overripe and is difficult to slice, you can simply scoop it out and mash the pieces on the toast.
Try Chinese-style avocado toast and see how you like it compared to the classic version of avocado toast!

I just happened to have half an avocado in my fridge so I tried this. This is really good! I usually eat two toasts for lunch but one toast was filling with the addition of egg. Soft egg with soy and chili oil was a great combination. Will be repeating this in future.
