“Dumpling” seems to be an English word used for any Chinese food that consists of some sort of filling in some sort of dough. They can be sweet, savory, fried, steamed, or boiled. Fluffy, crispy, even sticky! Another thing they have in common is that they’re a lot of fun to eat – they all combine interesting texture and satisfying flavors. My favorite is Mom’s Best Lamb Dumplings – boiled Northern Chinese style.
